Muffin Foster’s with Craisons.

It is winter outside my window.  Cold, snowy and I need to make something hot for breakfast to fight that winter blah.

I made a purchase of a Pull-apart/Monkey Bread/Cobblestone Muffin yesterday that I did not eat.  It, along with a few just past prime bananas, gave me an idea.

Butter started melting in the medium-hot pan as I stripped the bananas.  I cut them into bite-sized pieces and reached for the raisons.  My hand landed on the dried cranberries and I mentally shrugged.  Dried fruit is dried fruit, right?

A lump of brown sugar was put into the browning butter(mmmm, nutty!) and softened for a few seconds before the bananas and then craisons were put into the pan.   I used the pan-flip method of glazing the different pieces until the wonderous sauce made with the butter and banana coated everything.

The cut in half muffin was put in the middle to heat and absorb some of the sauce.

It did not take long from ‘Hungry!’ to plating, about 10 minutes.

I could have put in a few other things, such as lemon or vanilla extract, or even a splash of liquor.  More butter would have been needed if the bananas were not as soft as they were and almost any dried fruit would have worked as a flavor enhancer.

Adding up all of the stats, it cost about $2.50 for two plates and about 340 calories.  Love that butter!
