Two meals, one starch

Chef Rena says: “There is never a left-over.  It is a pre-cooked ingredient.”

With this in mind, a two-meal use for mashed potatoes.

I had a bit of chorizo, some mushrooms and fresh basil one night.  I made it into a ‘gravy’ and needed something to put it on.  I was lucky enough to have a box of mashed potatoes. I decided to make the remainder of the box, which made about 5 servings.

The potatoes took about as much time as making the chorizo into a sauce with the mushrooms and basil.  I added a little sour cream to the potatoes to give it a boost.IMG_2020

It was served potato, then gravy then some nice melty queso over it.

There were only two people to feed, so the rest was put into the cool box for the next day.

The next day was a little rushed.  There had been plans to make potato croquettes, but they turned into pancakes.  Still yummy!  To the mashed potatoes, I added eggs, cheese and a few seasonings.

I used a #2 disher/ice cream scoop and plopped the solid mass scoop by scoop onto the griddle.  I had to be patient and let the stuff cook before turning it and squishing it with the spatula to flatten it.

It was savory and could have been served with salsa or some thing heartier.  I happened to just have mine with a little butter. IMG_2029If you think of everything in your refrigerator as just another ingredient, not left overs, you have many more things you can make from it.
